Watermelon and Coconut Water Smoothie

Ingredients
1/4 cup frozen pineapple chunks
2 tablespoons cold coconut water
12 fresh mint leaves
2 cups cubed seedless watermelon, frozen
Juice of 1 lime
1 teaspoon agave, maple syrup or honey
-Add all ingredients into a blender and blend. Pour and serve!
Tip: Have your children help you combine the ingredients into the blender.
Watermelon, Cucumber, and Feta Bites Recipe

Ingredients
1 cucumber, cut into 24 slices
2 cups seedless watermelon (without rind)
1/2 cup crumbled feta cheese
1 1/2 tablespoons fresh lime juice
1 tablespoon maple syrup
2 teaspoons finely chopped fresh mint
-Arrange cucumber slices on a platter. Cut the watermelon into 1 ½ x ¼ -inch squares.
-Place a watermelon slice on top of each cucumber slice. Scatter the cheese on top. Double up the layers if making stacks.
-Whisk together the lime juice, maple syrup and mint in a small bowl. Right before serving, drizzle this mixture over the stacks.
Tip: Let your kids build the stacks by arranging the cucumber slices and watermelon.
Skinny Mini Watermelon Cakes (your kids will love this one!)

Ingredients
1 small watermelon
2 cups cool whip
Rainbow sprinkles
-Using a chef's knife, slice a small portion of the watermelon rind off. Use the flat edge to stabilize the watermelon on a cutting board.
-Slice the watermelon into 2 inch thick slices.
-Using a 3" biscuit cutter, cut small rounds out of the slices of watermelon.
-Place a dollop of Cool Whip onto each round and add rainbow sprinkles.
-Enjoy!
